When the brits came and colonized malaya, they introduced us natives to the concept of tea-time, with smashing good little snacks alongside a steaming hot pot of earl-grey tea. we malayans took it one step further and improved upon the scones and tea that they had imparted to us. A light fluffy cake that is not heavy, but with just the right amount of sugar to make it sweet and oh so delightful. Due to the spongy, light texture, one can simply eat a billion of these without ever feeling heavy or saturated by the heavy fat or cream commonly found in british tea-time snacks. An utterly delightful adaptation to the local climate, tastes and flavours. Oh, did i mention that it tastes fantastic when dipped into a fresh cup of tea ? Absolutely smashing old sport. When aunt gera first baked this, i simply had to get that recipe from her. The smell of freshly baked almonds wafted along the corridor to her flat and i absolutely fell in love with this recipe at first smell. imagine a thick buttery crust, melt in your mouth but not dry and flaky, with its rich indulgent buttery taste and that oh-just-about-to-disintegrate crumbly texture and filled with bits and bits of tiny crushed almonds, with a perfect topping of a whole almond nut. They are either too sweet, having too much sugar or they will scrim on the grated coconut bits, which takes away half the texture and cuts back on the delicious coconut taste. Now with this recipe from uncle bob (my favourite uncle who is a chef), you can create THE perfect coconut tart. This recipe combines the coconut, tart and pastry in perfect proportions which creates a thick, pie-like crust which melts in your mouth because of the high butter content, with a absolutely gorgeous, indulgently creamy custard center and topped with with golden brown bits of grated coconut right at the top in a fragrant yet slightly singed combination of perfection. the verdict ?
