This is essentially a homemade hot pocket. I love to find ways to create fresh, home-cooked copies of my favorite processed meals. When I make them I know I can pronounce all the ingredients. If I want to, I can control sodium, fat, and calories. These would be great frozen, thawed overnight, and then reheated the next day for lunch. Take two large chicken breasts, season well to taste with salt, pepper, seasoning salt, garlic powder, onion powder, and a bit of dry mustard if you like that kind of thing! Bake at 350 until the chicken is cooked through. I like to bake my chicken up on wire racks on a cookie sheet. I find they cook more evenly, and keeping them out of their own liquid makes the breast more appealing overall. It won’t hurt to cook them directly on a baking sheet though. Think of chicken and the first thing that would come to mind is probably a fat overweight dude with an impressive mustache and his fried chicken from a certain mid-west state of America. Tsk tsk tsk. What would ip man say about that ? rediscover chinese style chicken with an equally fantastic taste. While it does not boast of '23 different secret herbs and spices', i can certainly say that the marinade consisting of *shhh, a not-so-secret secret* oyster sauce, shao xing wine, dark soy sauce, sesame oil and crystal rock sugar, that brings out the finest of the fowl flavour. How ? ahhh.. you'd have to try it to find out. Think of chicken and the first thing that would come to mind is probably a fat overweight dude with an impressive mustache and his fried chicken from a certain mid-west state of America. Tsk tsk tsk. Dak Bulgogi (Korean BBQ Chicken)
We have been meaning to do this dish for a while but didn't want to deal with cutting up chicken thighs for 20 minutes. But being the dutiful man and cook of the household, I decided to get my hands dirty and cut up some chicken things. In order to get a that single cut of "steak" from the thigh, it actually takes some precision and some knife handling skills (luckily all fingers still intact). But after all that peeling, deboning, cutting, and lastly marinating it was all worth it. We got the savory sweet flavors that bulgogi marinades are known for but made better with the tender and juicy thighs soaked overnight. The key though to making the dish perfect is to cook them on medium heat rather than the high setting; otherwise they will char (because of the sweet marinade) quickly without the insides being cooked properly (which is never good with chicken). We served them with Boston bibb lettuce and some dipping sauces. Tangsuyuk (sweet n sour pork) and jajangmyung (black bean paste noodles), two wildly popular fast-food dishes in Korea, are Chinese in origin but have a distinct and modified Korean taste to them. They have been around in Korea for a long time now so it's quite possible that current generations might think of them as uniquely Korean. Anyhow, (sorry to digress here) I still remember hearing those insanely quick and dangerous motorbike delivery guys that can be seen weaving in and out of traffic, delivering their meals in a matter of minutes. As a funny side note, I even got into a minor accident with one of these guys as he blindsided my Honda motorbike (yes, I had a motorbike in my heyday). Samgyetang, a healthy and invigorating chicken soup with dates (daechu) and ginseng (insahm) is a dish I have ambivalent feelings about. Even after almost a decade, it still conjures up images of my time in Korea where my boss forced me (ok persuaded) to eat this soup in the dead-heat of summer. His reasoning/logic/explanation (take your pick) was that you have to eat this particular hot soup in order to prepare for or combat the summer heat (like fighting fire with fire I guess). Yes, I know what you are thinking and I won't even try to explain what my reply was to my boss. Anyways, I was confronted with this wildly fascinating annual phenomenon every summer when Koreans (thus my coworkers too) would flock to get their dose of this soup (and this soup alone!). And what do you know, life has come full circle and my conversion to Korean culture/superstition fulfilled when I found myself wanting this soup a few days back when the weather turned unexpectedly hot. Did it make me feel "colder" to the new warmer weather? Not one bit, but it did bring cooler weather that has lasted up until present time. Dak Galbi (Spicy Chicken Stir Fry)
Dak galbi is another spicy stirred-fried chicken dish that all Koreans seem to love. The main dish between this and other spicy dishes is the addition of cabbabe and usually perilla leaves, giving it a distinct and satisfying aroma. There are many dak galbi restaurants/quasi-bars that set up a single, large frying pan in the center of the table for everyone to enjoy the meal together (Koreans literally love eating together). For people familiar with this, you will know that you are not completely finished with the meal when the pan is empty, but rather an ajumma (or waitress) will add some rice and other ingredients to make delicious bokkeum bab (fried rice combinations). It's kind of equivalent to getting something free when least expect it. Anyways, we made this tonight and it came out just right. Dak Bokkeum Tang (Korean Spicy Chicken Stew)
We have been making dakdoritang (aka dakbokkeum tang) for quite a while now, but it has become a regular in our household for the simple reason that it's easy to make for a family of four, packs a lot of intense flavors (and spice), and provides all the nutritional benefits that you could ask for in a dish. Since this is supposed to be a spicy dish, you can easily substitute the gochugang (red pepper paste) and gochugaru (red pepper flakes) for soy sauce, where it may be more suitable to children who cannot tolerate spicy foods. Also, most people use chicken pieces such as thighs, breasts, and/or drumsticks (the bones help create a more flavorful broth), but you can use boneless pieces that work just as well and it's easier for kids to eat. Plus, the wife adds a special ingredient to make this dish even better--glass noodles. It may sound weird, but believe me, the noodles add more texture to this already fine recipe.
