Gori Gomtang (Korean Oxtail Soup)
The weather turned cold for a brief moment here (but luckily warmed up the last few days) so we were thinking of different soups to make other than our usual kimchi jigae (spicy kimchi stew). Then one day while perusing the meat section of the grocery store, we found oxtails just calling out our names. Okay it didn't actually happen that way, but we did want something different and non-spicy. Gori gomtang is a classic Korean soup made with oxtail pieces, cooked for hours on end until the meat literally fall off the bone. It is reputably good for stamina (as most older generation Koreans believe fervently) but I think it just tastes light and clean, especially eating with vegetable banchan side dishes (especially kakdugi; cubed radish kimchi). This is a perfect winter soup but can be particularly beneficial if you have a cold (for which I do by the way). Also, the beef stock can be made in large portions to save for other soups, which is a huge time saver. All in all, we got a few meals out of this and the family loved it. Jang Jorim (Soy Beef Strips) w Hard Boiled Eggs
Today we made one of my favorite meat side dishes called jang jorim, which is basically strips of beef (usually made from brisket) that has been boiled in soy sauce and other ingredients. It is quite salty to be eaten alone, but it is a great complement with rice and soup dishes. The peculiar aspect of this dish is the addition of hard boiled eggs (usually smaller quail eggs), green/red chili peppers, and soy sauce. We were missing some ingredients like green chili peppers but the result was still spot on. The original method of preparing and cooking this dish is quite extensive and time-consuming (as with most traditional dishes) but we were able to cut some steps without sacrificing the overall taste. Actually, I made it without the wife's knowledge and she was quite surprised not only of the taste but the way in which I prepared it. My own version is provided below. Bulgogi (Korean Barbecued Beef)
Perhaps the most popular dish among foreigners is a Korean beef dish named bulgogi. It's sweet, savory, and full of flavors, stemming from the long marination process. It is also popular with Koreans, where you can usually find it on the menu of special occasions and holidays. Bulgogi is marinated in a mixture of soy sauce, sesame oil, black pepper, garlic, onions, ginger, and sugar for at least a few hours (we do it overnight) two to enhance the flavor and to tenderize the meat. It is traditionally grilled but using the stovetop is common as well. Like most Korean meat dishes, it is usually served with a side of lettuce, spinach, or other leafy vegetables, which is then wrapped with the cooked meat, ssamgjang (dipping sauce) and other banchan (side dishes). Jang Jorim (Soy Beef Strips) w Hard Boiled Eggs
Today we made one of my favorite meat side dishes called jang jorim, which is basically strips of beef (usually made from brisket) that has been boiled in soy sauce and other ingredients. It is quite salty to be eaten alone, but it is a great complement with rice and soup dishes. The peculiar aspect of this dish is the addition of hard boiled eggs (usually smaller quail eggs), green/red chili peppers, and soy sauce. We were missing some ingredients like green chili peppers but the result was still spot on. The original method of preparing and cooking this dish is quite extensive and time-consuming (as with most traditional dishes) but we were able to cut some steps without sacrificing the overall taste. Actually, I made it without the wife's knowledge and she was quite surprised not only of the taste but the way in which I prepared it. My own version is provided below. Gori Gomtang (Korean Oxtail Soup)
The weather turned cold for a brief moment here (but luckily warmed up the last few days) so we were thinking of different soups to make other than our usual kimchi jigae (spicy kimchi stew). Then one day while perusing the meat section of the grocery store, we found oxtails just calling out our names. Okay it didn't actually happen that way, but we did want something different and non-spicy. Gori gomtang is a classic Korean soup made with oxtail pieces, cooked for hours on end until the meat literally fall off the bone. It is reputably good for stamina (as most older generation Koreans believe fervently) but I think it just tastes light and clean, especially eating with vegetable banchan side dishes (especially kakdugi; cubed radish kimchi). This is a perfect winter soup but can be particularly beneficial if you have a cold (for which I do by the way). Also, the beef stock can be made in large portions to save for other soups, which is a huge time saver. All in all, we got a few meals out of this and the family loved it. Kalbi (Marinated BBQ Short Ribs)
On my half day off, I decided to "relax" by making my favorite (and the kids too) Korean meat dish--kalbi (marinated short ribs), which are tender, savory, sweet, and full of delicious flavors. These are best to be cooked on a grill (especially great for special occasions with friends and family) but they also taste good pan-fried off of the stove. The kids love kalbi too not only for its taste, but they get to use their hands and nibble/chew at every bit of meat from the bone (yes, it's that good). As for the actual technique (or secret steps) to making great kalbi is the marinade itself. Many people have their own variations (and I have tried all of them), but the key ingredient is the use ofAsian pears (don't worry American pears or apples will work too) and grating them or putting them through a food processor. The old-school Korean moms (and my mom included) don't use food processors (too high tech for them I guess). You can also substitute or use in combination with citrus drinks like 7-Up or Pepsi, not only bringing that extra sweetness, but the carbonation supposedly helps with tenderizing of the meat as well.
