Ingredients

  • 12 pound Turkey
  • 2 tablespoon Butter and vegetable oil
  • 2 cup Diced celery and onion
  • 1/2 cup Frozen cranberries
  • 6 cup French baguette (diced)
  • 25 gram Turkey gravy
  • 1 teaspoon Ground sage
  • 1 teaspoon Oregano leaves
  • 1 teaspoon Parsley leaves
  • 1 teaspoon Poultry seasoning
  • 2 teaspoon Coarse black pepper
  • 1 teaspoon Garlic powder
  • 2 teaspoon Garlic salt

1. In a pan over medium heat, melt the butter. Saute onions & celery for 3 minutes

2. Add in the ground sage, oregano leaves, parsley, poultry seasonings, coarse black pepper, garlic powder

3. Mix the cooked mixture with baguette, turkey gravy and frozen cranberries

4. Take turkey out of packaging and remove neck and giblets and reserve, rinse turkey under running cold water pat turkey with paper towel ensuring cavity is dry.

5. Place the stuffing in step (3) in the main cavity of the bird and fold the drum sticks to secure, fill small pocket at the neck folding the wings over the skin to seal the opening. Tie up the leg of the turkey with a string

6. Place some leftover onions and celery in the pan and lay the turkey over it. Mix oil, 1 tsp pepper and 2 tsp garlic salt together and rub over the exterior of the bird

7. Cover the pan with aluminum foil and place the turkey in a preheated 175degrees C oven for 4 hours

8. Let it rest after 30minutes to cool down and remove the stuffings
