Sapin-sapin is a layered glutinous rice and coconut dessert in Philippine cuisine. It is made from rice flour, coconut milk, sugar, water, and coloring with coconut flakes sprinkled on top.

Ingredients

  • 750g sticky rice flour
  • 500g semi refined washed sugar
  • 500ml coconut milk
  • 100g sweet potato, boiled, peeled & mashed
  • 1/8 teaspoon orange food color
  • 100g purple yam (ube) boiled, peeled & mashed
  • 1/8 teaspoon purple food color
  • 1ltr. coconut milk

1. In a mixing bowl add rice flour, refined washed sugar, milk (add more milk if needed). Mix well until mixture becomes thick.

2. Divide the above mixture into 3 equal portions and add coloring into 2 portions and leave another as it is.

3. In left portion put the purple yam, it will become in purple color.

4. Heat 1 ltr. coconut milk in a shallow pan. Don't stir it. Once the solid turns golden brown, scrape them off the pan and put aside.

5. Put the banana leaves in a round shape container. Use remaining oil to grease the banana leaves.

6. Pour one of the 3 mixture into the greased banana leaves. Add potatoes and enjoy!!
