  • 200 gram Wheat Flour
  • 300 gram Syrup
  • 1 teaspoon Malt
  • 50 gram Cooking oil
  • 1 teaspoon Annatto oil
  • 100 gram Roasted melon seeds
  • 100 gram Cashew nuts
  • 100 gram Roasted white sesame
  • 100 gram cubed winter melon
  • 50 gram red candied lemon
  • 50 gram red ginger preserves
  • 100 gram barbequed vegan protein
  • 1 whole Vegan chinese sausage
  • 150 gram Cooking oil
  • 1 tablespoon Malt
  • 100 gram Syrup
  • 100 gram Sugar
  • 100 gram Roasted mochi flour
  • 7 whole vegan eggs
  • 100 gram cooked and mashed mung beans
  • 1 tablespoon Lemon juice
  • 1 tablespoon Alkaline water

1. Pour the syrup and sugar into a pan. Let it boil for 20 minutes under low heat. After boiling, add lemon juice and boil for another 15 minutes. Add the alkaline water.

2. Pour in 200 grams of the syrup, malt, cooking oil and annatto oil. Mix well and add the flour. Let it rest for 30 minutes.

3. Mix the melon seeds, cashew nuts, white sesame, winter melon, candied lemon, red ginger preserves, vegan protein and cooking oil. Add 100 grams of syrup, malt, sugar and mochi flour. Mix until it is consistent. Divide into 7 portions. Put a vegan egg in each portion. Put the dough into the moon cake mould.

4. Pre-heat oven to 250 degrees C and bottom temperature at 200 degrees. Bake the moon cakes for 15 minutes. Spray some water on the moon cakes. Bake for another 7 minutes.
