This Katong Laksa rendition is very similar to how Seetoh did it on Martha Stewart's Show. It so easy to like but not as easy to make but it's seductively spicy. Watch Seetoh breaks them down step by step.

Ingredients

  • 120 gram Shallots
  • 30 gram Candlenuts
  • 5 gram Belanchan
  • 5 gram Fresh turmeric
  • 60 gram Lemon grass
  • 50 gram Garlic
  • 10 gram Blue ginger
  • 1 piece Fresh red chili
  • 25 gram Dried chili
  • 2 teaspoon Coriander powder
  • 5 gram Laksa leaves
  • 180 gram Dried shrimps
  • 250 milligram Water
  • 130 gram Laksa beehoon
  • 20 gram Bean sprouts
  • 4 slice Fishcake
  • 2 piece Prawns (peeled and parboiled)
  • 8 piece Blood cockles
  • 3 piece Brasied tof puff
  • 1 pinch Laksa leaves (chopped for garnish)
  • 80 milligram Oil
  • 1 liter Water
  • 40 gram Lemongrass
  • 5 gram Laksa leaves
  • 500 gram Coconut cream
  • 1 pinch Salt (To taste)
  • 1 pinch Sugar (To taste)
  • 0.5 teaspoon Chicken seasoning powder (optional)

Preparation Method

1. Blend the garlic, chili, belanchan, laska leaves, ginger, dried chili, lemon grass, dried shrimps and shallots with a bit of water

2. Stir fry the blended mixture on low fire

3. Simmer the mixture in water

4. Add in the lemon grass and laksa leaves to the spicy mixture

5. Strain the mixture

6. Place the dried tofu, noodles, bean sprouts into the spicy soup
